Exclusive vacuum-sealing technology
for the home
The vacuum drawer is used to vacuum-seal food in bags. It is then ready to be
gently cooked on the Vacuisine setting in the CombiSteamer.
After the drawer lid is closed, the vacuum chamber
becomes airtight. The vacuum pump sucks the
air out of it until a prede昀椀ned negative pressure
is achieved. This removes the air from the
vacuum chamber, the bag and the spaces in the
packaging.
For everyday use or for that perfect dinner
A vacuum drawer has a wide variety of uses. For
example, you can blanch vegetables from your
own garden or make them into a soup, vacuumseal them in suitable portions and store them in
the freezer for a considerable time with no loss
in quality. Larger quantities of meat can also be
divided into portions prior to storage. And even
preserving jars and jam jars can be vacuum-sealed
in the drawer.
The accessory for external containers enables
you to extend the shelf life of foodstuffs and
bottled items. This setting extracts the air from
oil or wine bottles to prevent unwanted oxidation.
Other commercially available vacuum containers
can also be vacuum-sealed using this function.
For a long storage life, the food needs to be
top-quality and must be kept in a fridge or freezer
compartment.

Vacuum-sealing food in bags also prepares it
for Vacuisine – sous-vide cooking at a precise
temperature in the CombiSteamer. The vacuumsealed food can also be cooked gently in a bain
marie.
Four levels
Unlike most free-standing appliances, the vacuum
drawer removes the air from the entire chamber,
allowing you to vacuum-seal liquids such as soups
and sauces as well as foods with a high liquid
content.
The appliance can be set at four different levels:
Level 0 for sealing bags at a gentle negative
pressure. Level 1 for pressure-sensitive foods such
as berries, soups, sauces and meats with lots of
marinade. Level 2 for less sensitive foods such
as fruit and peppers. Level 3 for foods that are not
sensitive to pressure such as meat, carrots and
hard cheese.
