BACK TO THE ROOTS
Wurzelbrot originated in the canton of Graubünden. Known for its flour-dusted crust, airy
interior, and distinct shape resembling tree roots, its official version is the Pain Paillasse, a
recipe invented by baker Aimé Pouly in Geneva in 1993, now a registered trademark. Today,
only bakers with an official license may produce it.
